We will need: kefir, water, eggs, sugar, flour, salt, soda and vegetable oil.
My recipe is for a small portion of pancakes. We are a small family, so this is enough for breakfast. This time I got exactly 15 pancakes with a diameter of 19 cm.

In the dairy kitchen they give us kefir "agusha", but for some reason the child does not like it. I often make pancakes on this kefir.
Also, they can be made on any other sour milk. Sometimes I do it on ryazhenka or yogurt.
We will need: kefir, water, eggs, sugar, flour, salt, soda and vegetable oil.
My recipe is for a small portion of pancakes. We are a small family, so this is enough for breakfast. This time I got exactly 15 pancakes with a diameter of 19 cm.

In order to cook these delicious pancakes, you need to take two eggs, beat them with a pinch of salt.

Then we add a glass of very hot water, almost boiling water, but I, nevertheless, bring it not quite to a boil, but to the first bubbles.


In this case, it is better not to stop whipping. The mixture begins to foam and rise strongly.


Pour in kefir

and add sugar. I love sweet pancakes, so I put 3 tbsp. spoons. If you make pancakes with meat, then one or two without a slide will be enough.


You need to add a little sunflower oil to the dough - just a couple of tablespoons. I pour on the eye.


Next, add the flour and soda and mix everything well with a mixer. In general, according to the recipe, it is supposed to put 1 glass of flour, but a lot depends on the density of kefir and the quality of the eggs. I try to put so much flour so that the dough turns out to be liquid, otherwise thin pancakes will not work. The consistency should be like thick good kefir, so that the dough spreads well in the pan.


I have a special pancake pan, so even the thinnest pancakes from the batter itself turn out great on it.
I grease the pan a little with oil before baking each pancake.


Pour the dough into a heated frying pan and bake pancakes. The dough immediately begins to bubble and many holes form.

According to the map, you need to take almost 6 grams. I took 4, and it seemed to me a little too much. I would say take a third of a teaspoon. This is plus or minus 3 grams.

About sugar. With this amount of sugar, pancakes are not at all sweet. But! Please note that pancakes are served with jam, preserves or sprinkled with powdered sugar. So there will be enough sweetness. If anything - feel free to pour 1 heaping tablespoon of sugar, they will become pleasantly sweet.

So, just mix with a whisk, fork or spoon kefir, egg, sugar, salt and soda.


Sift flour. Pour the kefir mixture into the flour in two batches. First, pour in a little more than half and mix well so that after the dough does not turn into small lumps.


After mixing well after the first run, pour in the rest of the mixture and mix well again.
The dough turns out to be pleasantly thick and, since the soda begins its work, slightly airy.


In kindergartens, they are fried in cast-iron pans. For lack of it, all the others are fine too. Of course, for frying (and not only) pans with a thick bottom are better.

Pour a little vegetable oil into a normally hot frying pan, and then with a large spoonful of dough and spread lightly, form a thin pancake. Keep in mind that it will double in size during frying.
Fry over medium heat, and when you turn it over, make it even smaller - you need to let the pancakes bake, and in no case burn.
