How to cook the perfect omelet. Omelet with cream, sausages and cheese in a slow cooker How to cook a fluffy omelette in a frying pan Omelette with sour cream

- certainly fluffy, tender, tasty and melting in your mouth. But does it always turn out like this? In the morning, everyone is rushing to work, and the time for preparing breakfast is reduced to a minimum. Sometimes, instead of an airy omelette, the plates end up with a dry, dense mass, more reminiscent of an egg pie. An unsuccessful culinary “masterpiece” can be disguised with herbs, delicious sauces, meat, vegetable, mushroom and cheese fillings. But every housewife wants to cook a delicious omelette that doesn’t have to be hidden under ham and cheese, but how to learn this art? Many cookbooks write that an omelette is a very complex dish that requires skill, dexterity and knowledge of some special secrets. In fact, everything is much simpler, and even a novice housewife can easily understand how to properly prepare an omelet and surprise the whole family.

Preparing dishes and ingredients for the omelette

Nice frying pan. Omelet is a capricious dish that will not be cooked in the wrong container with a thin or uneven bottom. The ideal option is a cast iron frying pan with a non-stick coating, which heats up evenly and retains heat for a long time, although a regular Teflon frying pan is also suitable for making omelettes. It is good if the lid has a hole for air to escape so that the omelette does not turn out too watery.

Egg quality. The eggs should be very fresh, preferably homemade, but if you buy them in a store, try to choose only high-quality products. The fact is that it is impossible to cook a delicious omelet from bad eggs, no matter how hard you try. The most suitable store-bought eggs for omelettes are diet and table eggs. Fresh eggs have a shell without shine and are not too light in weight. The most famous way to check is to put the eggs in water. Fresh ones sink immediately.

Oil. The best oil for frying omelettes is butter: tasty, aromatic. Despite the fact that many people fry omelettes in vegetable oil, it is high-quality butter that makes the dish melting and tender.

How to cook a lush and tender omelette: secrets and subtleties

The recipe seems simple even for a schoolchild: beat eggs with milk or cream, add salt, pour the egg mixture into an oiled hot frying pan and fry for several minutes under a closed lid over medium heat. Then cut the omelette into portions or place the whole omelette on a plate and sprinkle with herbs. However, knowing some tricks and culinary techniques will help you prepare an airy omelette with a creamy taste that all family members will devour with gusto.

Beat the eggs. Culinary experts say that it is better to beat an omelette with a whisk or fork, rather than with a blender or mixer, so as not to disturb the structure of the whites and yolks - such an omelette turns out to be especially fluffy. For a diet omelet, use only whites, and if you want a thicker consistency of the dish, prepare an omelet from yolks. For an omelet-soufflé, the whites are whipped into a fluffy foam, then the yolks and other ingredients are added. The most important thing is to bake the omelette as soon as the eggs are beaten, otherwise the dish will turn out dense and flat.

The splendor of an omelette. Despite the fact that dairy products are added to eggs for fluffiness, do not overuse liquid - ideally there should be 1 tbsp per 1 egg. l. cream or milk, otherwise it will be too wet and will fall off. Instead of milk, you can use broths, kefir or fermented baked milk - with fermented milk products the omelet turns out very high and airy. If you add a little sour cream or mayonnaise to the egg mixture, the dish will acquire a pleasant creamy taste, and with mineral water the omelette becomes unusually light and fluffy. Some recipes recommend adding a little semolina or flour to the eggs - no more than 1½ tsp. for 4 eggs. Flour gives the dish a slightly denser consistency, retains its shape and adds volume - for this purpose, some people add soda, starch or a pinch of yeast to the eggs. And only the French do not add anything to the omelette, believing that it should not rise. Well, there is no arguing about tastes!

Delicious filling. You can add additional ingredients to the egg-milk mixture - seasonings, vegetables, mushrooms, meat, fish, powdered sugar instead of salt, fruits, nuts and chocolate. It all depends on the recipe, tastes and preferences of family members, but even if you are a follower of conservative culinary traditions, try making a sweet omelet at least once. It is no coincidence that the first omelets that appeared in Ancient Rome were desserts that were prepared with honey. It is important that all the ingredients that are added to the eggs, from milk to pieces of meat, are not cold, otherwise the omelet will not rise.

How to fry. At first it should be fried over high heat, but as soon as it starts to rise, the heat should be reduced to a minimum so that the dish simmers under the lid until cooked. If it is still wet on top and already burning on the bottom, pierce the omelette with a fork or slightly lift it with a spatula so that the liquid component drips down. You can fry the omelette on both sides, and after turning off the heat, leave the dish covered for a couple of minutes so that it reaches the desired condition.

How to serve. The omelette is served in the form of portioned pieces, folded in half or into a tube, filled with sweet or savory filling. There are thousands - it can be a delicious dessert, a hot or cold appetizer, a main dish, a side dish, a base for sandwiches, an ingredient for salads and sushi. Each country has its own peculiarities of preparing this dish, and if you want to learn how to make a French, English or American omelette, you can go on a trip, because it is better to see once than to hear a hundred times...

We wish you pleasant culinary discoveries and bold experiments!

Omelette in the oven recipes

The baked omelette is fluffy, original and has an incredible aroma. Its preparation takes several times longer than a standard egg dish in a frying pan, and even more so than an omelet in a slow cooker, which is usually fried on only one side. But if you have a little time left, it is better to cook an omelette in the oven: it will turn out more tasty and healthy, because it will avoid frying in a large amount of fat.

Omelette in the oven - recipe No. 1 with cheese and sour cream, recipe No. 2 - with spinach. It’s easy to prepare them; step-by-step photos will help you. A tasty and satisfying breakfast snack for the whole family

An oven-baked omelette has less calories than a pan-fried omelette. As a complement to eggs, you can add vegetables, chicken, sausages, mushrooms, and cheese.

Omelette in the oven with sour cream

  • chicken egg 2 pcs.,
  • sour cream 100 g,
  • soda 1 pinch,
  • parsley to taste,
  • salt to taste,
  • ground black pepper to taste,
  • butter 10 g,
  • hard cheese 50 g.

Remove chicken eggs from the refrigerator, rinse under running water and dry with a napkin. Break into a deep container. Beat lightly with a fork or hand whisk.

Add sour cream of any fat content and a pinch of soda. Mix with a whisk until all ingredients are combined.

From the greens, you can take any herbs that you like best. In summer, use fresh herbs; in winter, frozen herbs are also suitable. Add chopped parsley to the egg mixture, in this case frozen greens. Season with salt and ground black pepper. Stir.

Grease a deep baking dish with butter. If you take a small form, the omelette will turn out more fluffy. Pour in the egg mixture. Sprinkle with grated hard cheese. Preheat the oven to 180-190 degrees. Place the mold in the oven. Bake for 15-20 minutes. The egg mass should set well.

The omelette in the oven with sour cream and cheese is ready. Serve hot, immediately after baking. Bon appetit!

How to cook an omelette in the oven with spinach (portioned)

The ingredients in the recipe are for 1 serving, increase them according to the number of players if necessary.

To prepare, you need to take a heat-resistant form - glass, metal or ceramic. If you need to keep a dish warm for a long time, it is better to choose a ceramic bowl: the clay walls will retain “oven” heat for a long time.

If you add the more common milk instead of sour cream to this dish, the omelette will turn out softer, but less satisfying.

  • chicken eggs – 2 pcs.,
  • sour cream (fat content 20%) – 2 tsp.,
  • spinach leaves – 3 pcs.,
  • green garlic - 2 feathers,
  • salt - to taste,
  • butter - a small piece for greasing the pan.

Break two eggs over a bowl. Add two teaspoons of sour cream to them and stir with a fork, pricking the yolks.

Using the same fork or whisk, beat the eggs until smooth and lightly foamy. Be sure to salt the egg mixture at this stage. The fact is that if you salt the omelet immediately before baking, the herbs will already be added to the eggs, and the mixture will not be able to salt evenly. So it's better to do it now.

Wash the spinach leaves well and shake off excess water. Finely chop the greens and add to the bowl with the egg mixture. Wash the green garlic feathers too and finely chop them with a knife. Place the garlic in a bowl and mix all the omelette ingredients thoroughly. Instead of garlic, you can use green onions, but then the omelette will not be able to please you with such a delicate and appetizing smell.

Grease the prepared omelette baking dish with a piece of butter so that the dish does not stick to the walls during baking.

Stir the egg mixture again until it is more or less uniform and place it in a greased pan. Light the oven and preheat it to 180 degrees. Place the pan with the omelette to bake and do not open the oven door during this entire process. It will take at least 20 minutes to cook the omelet in the oven. If after this time the dish is still liquid, leave it to bake for another 5-7 minutes.

Omelette is a traditional breakfast for most of us. It may seem that the dish is boring, primitive and unworthy of our attention. But if you prepare an omelette with cream, and add some interesting little things to it, it will seem like a masterpiece even to a real gourmet. And at the same time it will retain its main advantages - low cost, speed and ease of preparation.

Simple, but tasty: omelette with cream in the oven

In one go, you can prepare breakfast for 2-3 people, depending on their needs and appetite.

Beat five eggs with a whisk or primitive fork. Add some salt, you can use spices.

Pour in half a glass of cream. Their fat content depends on how dense the consistency of an omelet with cream is preferred by eaters. Knead (or better yet, beat again) and pour into a greased baking dish. We remember that the mass will double under the influence of temperature. So fill out the form no more than halfway.

Place the omelette in the oven for 25 minutes. Set the temperature to 160 degrees. You may need to “heat up” the oven more if the door does not fit tightly. This will have to be determined individually - you know your kitchen equipment better.

French offer

An omelette with cream and tomatoes in the morning makes an indelible impression. And the preparation is elementary.

We cut the tomato into quarters, removing the rough elements. Let the slices soak in olive oil, but so that the juice does not stand out too much. Beat two eggs with a third cup of cream and salt. Pour the mixture into the frying pan. As soon as the omelette with cream sets at the edges, cover with a lid. Keep on fire until completely thickened. Before serving, sprinkle with chopped herbs, and after placing on a plate, fold in half. Exclusively to maintain traditions!
