  1. Place a piece of butter on the bottom of a heated frying pan, add rice washed under running water, pour in hot boiled milk and add the zest. Everything simmers under a closed lid until the cereal is half cooked.
  2. Separately, beat the yolks with sugar, vanilla, salt, and stir in the raisins. The mixture is combined with rice “porridge” and removed from the stove.
  3. Separately, beat the whites until they form a thick, fluffy “hat.” Everything is connected. Place in a baking container.
