Pie was invented a very, very long time ago. If you believe historical references, then you can find out that this dessert comes from ancient Egypt and has the name "Fytyr". They baked it there with a filling of nuts and raisins.

In Rus', pies played the role of invitations - they were sent to guests, thereby inviting guests to the holidays. At the celebration itself, pies were prepared for each guest. Godparents were given special attention - they were served pies with jam, which were considered one of the most delicious types of this pastry.

Pie with jam (classic)

Cooking time - 30 min. Calorie content - 294 kcal.

This is the easiest recipe for making a pie with jam in the oven. Chop the butter or margarine and melt it in a small saucepan. Add eggs and sugar to it, all this must be beaten or mixed until smooth.

Then you need to mix the flour with baking powder or slaked soda, and then start adding it to the mixture of eggs and butter.

Flour should be poured in a little bit, immediately mixing it with the egg-butter mass, so that the dough turns out to be less steep and softer when baking. The resulting dough must be kneaded so that it becomes elastic and soft.

After that, the dough must be divided into two parts so that one is slightly larger and the other, of course, smaller. A smaller portion should be removed in the freezer for an hour. Next, you need to grease the baking dish and sprinkle it with flour, then lay out the dough.

After that, you need to take the jam and evenly distribute it over the dough in the form. Then we take out the dough that was in the freezer, and rub it on a coarse grater. Pour the resulting crumbs evenly over the jam.

Bake the cake in an oven preheated to 200 degrees for half an hour.

You need to break the eggs into a deep bowl and beat them with a mixer. Then add sugar and salt and beat again to get a dense white mass. While continuing to beat the mass, slowly pour in the vegetable oil. Kefir, chilled in advance in the refrigerator, also pour in there and beat until smooth.

After these manipulations, you need to add baking powder and beat again with a mixer. When whipping, do not get carried away - the dough will quickly thicken. The resulting mass should be viscous and thick. It should flow, but not be too runny.

After that, you can lubricate the form. Then you need to pour the dough into it and level it with a spoon. Jam is applied on top of the spoon, which also needs to be leveled. Then again you need to lay the dough and level it.

After that, you need to preheat the oven to 180 degrees, put the cake there and reduce the temperature to 160. The approximate baking time is 50 minutes.

Quick shortcake with jam

Cooking time - 25-30 minutes. Calorie content - 351 kcal.

You need to grind the butter on a grater and mix it with half the flour. Then you need to add vanilla sugar, regular sugar and salt. After, you need to beat the egg separately, add it to the flour and stir until smooth. Next, you need to add the rest of the flour and baking powder, then stir again and knead the resulting dough.

The dough should be elastic and soft, but should not spread. It should not be divided into two parts, so that one is larger and the other smaller. A smaller portion should be put in the freezer for half an hour.

Then you should grease the form and lay out a larger piece of dough evenly along the bottom. Pour or spread jam on top and smooth it with a spoon.

Then you need to grate a smaller piece of dough on a coarse grater and sprinkle the resulting pieces of jam.

Preheat the oven to 180 degrees and put the cake in it for 25-30 minutes.

First you need to warm up the milk a little so that it is about room temperature. Next, add yeast and mix until smooth. Then add salt and sugar to the resulting mass and mix again. Now set it all aside to allow the yeast to activate.

After a while, add the egg there and mix thoroughly. Then, without ceasing to interfere, add a little bit of flour. Next, take the resulting dough and knead on the table, the surface of which is sprinkled with flour in advance, otherwise the dough will stick.

After all these actions, you need to put the dough in a deep wide bowl and cover with something. The dough should be infused for about 40 minutes. During this time, the dough will rise, after which it will need to be kneaded again and put there in the same place and at the same time.

Then we separate the fourth part from the dough and put it aside. Pour the rest of the dough onto the greased baking sheet and smooth it out. After we spread the jam on top with spoons and level it. We take the deferred part of the dough and make oblong flat lines out of it, with which you need to lay a mesh over the jam.

After decorating the cake - put it in the oven, preheated to 190-200 degrees. Bake a yeast dough pie with jam in the oven for about half an hour.

Fytyr in Egyptian

Cooking time - 30 min. Calorie content - 265 kcal.

First you need to warm the milk to room temperature, then add yeast to it and let it stand so that the yeast is activated.

In the resulting mass, add the egg and salt.

Mix all this until smooth and, without ceasing to stir, add flour.

Knead the resulting dough. It will turn out not sticky and cool.

We divide this dough into two parts and roll them out thinly, but not too much - the dough should not tear.

After that, grease the layers of dough with butter and turn both cakes into a roll.

The roll itself must be wrapped in a snail.

The resulting snails must be individually put in plastic bags and put in the refrigerator for 2 hours.

While the dough is in the refrigerator, you need to prepare the cream. Break the egg into a deep bowl and mix with it the usual sugar, vanilla, starch and half a glass of milk. All this must be mixed until a homogeneous mass.

Next, we take out the snails that have risen with yeast from the refrigerator and roll them into round cakes so that they can fit in a baking dish. We put the first cake in the form so that there are high sides, otherwise the cream will overflow.

Then pour the cooled cream on top and cover with a second cake, wrapping the edges under the first sheet. After that, you need to pierce the top layer with a fork so that air comes out during baking.

Bake in the oven at 200 degrees for half an hour.

  1. Pies should be served chilled - so they are tastier. There is, however, an exception - Fytyr pie is best eaten warm;
  2. Pies are most often made in a round shape - this is considered the traditional form of this dish, but no one bothers you to improvise;
  3. Bake in the oven at either the lowest or medium setting at the proper temperature;
  4. If the filling of the pie is wet, then it costs a little longer to bake at the lower level, so the dessert will be baked for sure;
  5. Always follow the recipe.
