It sounds a little strange - cookies on tomato juice. When I first saw this recipe, I was a little surprised myself - can tomato juice make delicious cookies? I tried it - the result amazed me, although this has not happened often lately.

Now I love to bake these cookies and treat my friends to them. It's so interesting to watch how they try to guess the ingredients, and how surprised they are when they find out that there is tomato juice!

Quantity- 50-60 cookies.

Cooking time– 20-30 min.

I found the recipe for this wonderful cookie on the Cook with Love website.

  • 12 tablespoons tomato juice;
  • 10 tbsp vegetable oil;
  • 1 tsp soda;
  • 1 stack Sahara;
  • vanilla;
  • 4 stack flour.

Mix everything, except flour, until sugar is completely dissolved. Do not be alarmed, the mixture will sizzle and foam when adding soda.

Now add a little flour and knead the dough. Depending on the type of flour, you may need more or less of it. I have 4 cups enough for sprinkling baking sheets.

Now, for convenience, divide the dough into two or even four balls, roll into a layer and cut out cookies with molds or a glass.

Sprinkle a baking sheet with flour and spread the cookies not too close to each other.

Put in the oven for 10 minutes (approximately). Temperature - 180-200 ° C. At this time just cut out the cookies from the remaining dough.

It turned out two such wonderful baking sheets with cookies.

“During my student days, we used to prepare for exams according to our own, as it seemed to us then, method. Naturally, like all students, we did this in the last days before the exam. We didn’t hear about the Internet then, it was problematic to buy a textbook, had to sit in the library.

To make my task easier, I divided the exam tickets into 4 parts with three friends and each of us prepared only our own piece of questions, then we gathered at my house and tried to learn it all together in the evening and night. They drank tea and coffee to stay awake. And so, on another night of co-education, I began to simply fall asleep on a stool, sitting in the kitchen. No matter how my friends tried to stir me up, they did not succeed and I was threatened to remain unprepared and flunk the exam.

In the end, the girls simply lifted me up by force and offered to combine business with pleasure - bake them something for tea so that I would not sleep, and they would not die of hunger either. In those days, it was 1992, not only with textbooks, but also with products, everything was not great, so no special culinary delights were expected.

We decided to bake a cake - a poor student, who remembers, he was baked. And so I open the pantry, and I understand that I have run out of jam.

I look at the shelves with preservation and voice what I can bake a pie for them with - tomatoes, eggplants, cucumbers, tomato juice ... All this, of course, with laughter and humor. And then one of the girls says: “I heard that cookies are also baked from tomato juice.” Everyone laughed, each of us did not miss the opportunity to joke about this, funny ideas came up on the topic “salted zucchini in glaze” and “pickled cucumbers in caramel”, but decided to try it.

Since no one really knew the recipe, they decided to take the same “Poor Student” as a basis, only add tomato juice instead of jam, and add sugar to make it not sour. Then they immediately remembered that, after all, they cook jam from tomatoes, why can’t they bake a pie on them.

The dream passed like never before. While listening carefully to the exam question, slightly overdoing it with flour, the dough for the pie turned out to be a bit steep. Without thinking twice, I added more flour and decided to make cookies. Cookies with tomato juice it turned out surprisingly tasty and it came out a lot. By the way, all four of us passed the exam that day with excellent marks.

Ingredients

To prepare lean tomato cookies, we need:

50 ml sunflower oil;
250 g wheat flour;
50 g whole grain flour;

150 ml of tomato juice;
1.5 st. l. Sahara;
1 tsp baking powder;
1 tsp salt;
1/4 tsp black ground pepper;
oregano, salt "Extra" for sprinkling.

Cooking steps

To tomato juice add sunflower oil, sugar, black ground pepper and salt, mix well.

Pour into the mixture whole grain flour and baking powder, then, gradually pouring wheat flour, knead the dough.

The dough for lean tomato cookies will be soft and slightly sticky.

Put the dough on a substrate or table, sprinkled with flour, and roll out into a layer 5 mm thick.

Cut the rolled out dough using a pastry roller (or cutters), place on a parchment-lined baking sheet and sprinkle with oregano.

Send lean tomato cookies to the oven, heated to 180 degrees, and bake for 20 minutes. Remove from oven and sprinkle with fine salt.

When it cools down, it can be served. Lean tomato cookies turn out to be slightly crispy, not sweet, it perfectly diversifies home tea drinking.
