For the test I will need: 125 milliliters of selected milk; 125 milliliters good kefir; 7 grams of yeast; 1 piece chicken egg; 1 tablespoon regular sugar; 1 teaspoon salt, or sprinkle to taste; refined/ vegetable oil in 6 tablespoons; up to 500 grams of wheat flour. The pie filling consists of: up to 500 grams of beef or minced chicken; 1 head of good onion and 1 clove of garlic; up to 130 grams of any cheese of your choice; salt/pepper - to taste.


What do you use to top the cheese pie at the end? 1 piece of chicken egg yolk and literally 1 tablespoon of water.

Let's get started! How to cook Chrysanthemum meat pie, step-by-step recipe:

  1. In a saucepan with a thick bottom, I heat the milk not to a boil, then add sugar and dry yeast. Leave on fire and stir for up to 5 minutes.
  2. Afterwards, I pour in vegetable oil, kefir, break a chicken egg, add salt - mix it all thoroughly.
  3. Without stopping shaking, I gradually add wheat flour that has been passed through a sieve in advance. When homogeneous mass will gradually begin to thicken, you can proceed to kneading the dough with your own hands. The dough should be soft, chewy and sticky. Pour it in very carefully, do not rush to use it all at once, but, as they say, you need to “look at the situation.” The dough should not stick to your hands (otherwise increase the amount of flour).
  4. I make a ball shape from the base, wrap it in cling film and leave it for an hour in a warm and not ventilated place.

  1. To begin, I grate any selected cheese coarsely.

For the pie I will need: 125 milliliters of selected milk; 125 milliliters of good kefir; 7 grams of yeast; 1 piece chicken egg; 1 tablespoon regular sugar; 1 teaspoon salt, or sprinkle to taste; refined/vegetable oil 6 tablespoons; up to 500 grams of wheat flour; 140 grams of dry poppy seeds; 40 grams of regular sugar.

How to make sweet poppy seed pie:

  1. Yeast dough can be prepared by looking at the previous list. In the meantime, I'll start making the pie filling.
  2. First, the poppy seeds must be poured with boiling water so that they swell properly.
  3. Then I mix them thoroughly with sugar and leave to cool. By the way, you can easily buy ready-made poppy seed filling without bothering.
  4. Next I divide the dough into two not quite equal pieces.
  5. I roll out ⅔ of the part with a rolling pin and cover the layer with some part of the poppy seed filling.
  6. I do the same with the remaining dough.
  7. I roll both layers with filling into a roll and cut into segments ⅔ width.
  8. I turn the resulting segments in the opposite direction, and pinch the ends of the roll together.
  9. I do the same with a smaller roll.

The preparation time for this dessert is 2 hours, and the servings will be for as many as 8 people. Baked goods should be stored at room temperature.

For the dough and filling I will take the following ingredients:

500 grams of wheat flour; 250 milliliters of kefir; 2 tablespoons regular sugar; 1 teaspoon salt; 2 teaspoons of dry yeast for the dough base; 1 piece chicken egg; 5 tablespoons of sunflower oil; 2 pieces good apples any/any kind.

For external topping: up to 4 tablespoons regular sugar; up to 2 teaspoons ground cinnamon; 2 tablespoons of powdered sugar.

Let's start creating:

  1. The dessert is made on the basis of yeast dough, so, of course, I’ll start with that. First, I’ll heat up the kefir and mix half of it with the yeast itself, granulated sugar and a couple of tablespoons of flour. Mix well and leave to rise for some time.
  2. I mix the second half with sunflower oil and egg. I shake it with a whisk.
  3. I combine the two masses, add salt and gradually add the wheat flour sifted through a sieve.
  4. It's time to knead the dough. It should not stick to your hands, otherwise you should add a little more flour.
  5. Cover with a cotton cloth (you can also wrap it in cling film) and leave in a warm, dry place for up to 25 minutes.
  6. After the time has passed, I divide the dough into 3-4 parts, rolling each part with a rolling pin to a thickness of no more than 5 millimeters.
  7. An upside down glass or with a special mold I cut out circles on each layer of dough.
  8. Next, I cut the apples into thin slices so that later they can be bent without any problems. I place each slice on one half of the circle and cover it with the other half on top.
  9. I connect the ends of the folded dough with an apple slice.
  10. I roll the remaining dough (scraps) together, then roll it out again, but this time to the size of the baking dish.
  11. I grease the mold itself with odorless vegetable oil and place the layer there.
  12. I distribute apples along the bottom, which I then sprinkle with cinnamon and granulated sugar.
  13. The final touch: starting from the edges, I lay out “petals” along the edges of the mold, which I also sprinkle with a mixture of cinnamon sugar mixture.
  14. I send the semi-finished product to bake for up to 50 minutes at 180 degrees. Once cooked, you can sprinkle with sweet powder if desired.

To prepare we need: kefir, sunflower oil, flour, salt, sugar, yeast, minced meat (I used pork), ground black pepper, onion, garlic, cheese, flour, chicken egg, milk.

Mix flour, yeast, salt, sugar, add warm kefir and milk, egg, sunflower oil. Add flour and knead soft elastic dough. Knead until the dough easily comes away from your hands. You may need more or less flour than the specified amount.

Place the dough in a bowl greased with sunflower oil. Cover with film. Place in a warm place for 1 hour.

This is what the dough looked like after an hour.

Place it on a work surface and divide it into 2 parts. Place one part in a bowl and cover with a towel while we work on the other. Roll out the dough and cut out circles using a glass. My glass was 7.5 cm in diameter.

Place the circles on a board sprinkled with flour. Sprinkle each circle with flour and place another on top of it.

We take one circle, put minced meat on it, cheese on the minced meat...

Fold in half...

And just like that, as shown in the photo. We fasten the ends. We do this with all the circles.

We place the blanks in a mold, the bottom of which is covered with parchment. Cover with a towel and leave for 20 minutes. And I’m sharing this recipe today, because September 9th is Chrysanthemum Day! And let this holiday be celebrated not in Russia, but in Japan. But this country is close to me in its own way... because of St. Nicholas of Japan. Historically, there are more Buddhists and Shintoists than Orthodox Christians. And this holiday is celebrated mainly by representatives of these religions. Chrysanthemum Day is not a national holiday. At the same time, the chrysanthemum is present on the imperial seal, one of the most honorable Japanese orders is the Supreme Order of the Chrysanthemum, and the imperial throne is called nothing other than the Chrysanthemum Throne. Interesting, isn't it? 😉

  • khmeli-suneli - 0.5 tsp.
  • salt - 0.5-1 tsp.

The dough I made from:

  • milk - 80 ml
  • water - 80 ml
  • butter- 40 g
  • sunflower oil - 20 ml
  • egg yolk - 1 piece
  • salt - 0.4 tsp.
  • sugar - to taste (I didn't add it)
  • dry yeast - 1-1.5 tsp.
  • Wheat flour premium quality - 400 g (a little more than 3 glasses)*
  • * 1 cup = 200 ml liquid = 125 g flour

Additionally:

  • vegetable oil for greasing the mold - 1 tbsp.
  • egg or yolk for greasing the pie - 1 piece

I already described in detail how I kneaded the dough yesterday in the recipe. But I’ll still tell you briefly here.
Lightly beat the egg with salt and water. Pour it into the flour mixed with dry yeast. Added milk and melted butter. Remember that all ingredients should be pleasantly warm, because we are talking about yeast dough. When kneading, I poured in vegetable oil. I rolled the dough into a ball and let it rise in the warmth twice.

For the filling, I peeled the onion, chopped it randomly and put it in a blender bowl (you can use a meat grinder). I pureed it, then added salt and spices. I took hops-suneli; in my opinion, this seasoning is perfect for meat. You can give preference to other spices.

I also put the minced meat here along with the onions. I had scrolled it quite large, so I decided to break it again. But you can immediately scroll everything together through a meat grinder with a fine or at least medium nozzle.

I blended it again - the filling is ready!

Now the most interesting part - let's form a Chrysanthemum pie with meat! To do this, I rolled out the dough into a not very thin layer and cut out circles with a glass with a sharp edge, as I usually do for.
I removed the excess dough - it will be used for new rolling.

I placed the filling in the center of the dough circles, again like dumplings.

I sprinkled a little coarsely grated cheese, because I have a Chrysanthemum pie with minced meat and cheese!

Now I made a “boat” out of each such blank in sequence. The filling should remain inside, I just squeezed it on both sides with dough. I didn’t do any pinching.

The edges of the “boat” - sort of “ears” - were turned inward towards each other.

And then she brushed the top with yolk, slightly diluted with water.
