This is a recipe for cooking poultry with potatoes in the oven. I already have one of the articles that tells, But today I wanted to somehow diversify this recipe, and I decided to add another delicious ingredient to it - mushrooms.

It's mushroom season now. And this year, after a hot summer, all the mushrooms grow at once - both summer and autumn. Usually I make this dish with porcini mushrooms, but today I decided to make it with mushrooms. Moreover, we just collected them fresh. Salted, preserved. But after all, you need to take your soul away, eat yummy!

Chicken with potatoes and mushrooms in the oven

We will need:

  • chicken legs - 8 pieces
  • potatoes - 6-7 pieces
  • mushrooms - 300 gr
  • cheese -150 gr
  • spices
  • salt, ground black pepper - to taste
  • vegetable oil - 2 tbsp. spoons
  • boiled water -0.5 cups

Cooking:

I am preparing a dish of chicken legs, but you can cook it from different parts. The thighs, wings, and breast will do. Or you can just cut it whole into portioned pieces and cook from them.

The main thing is that the pieces are about the same size so that everything cooks evenly. And of course, if you are preparing for the arrival of guests, it is advisable to take the same pieces so that it is convenient for guests to serve equal portions.

1. Rinse the pieces, dry with a paper towel. The skin, if desired, can be removed, or left - as you wish. It is clear that without the skin, the dish will turn out to be completely dietary.

2. Salt and sprinkle with spices. You can take for this already specially prepared spices for chicken, which are sold in the store. Or you can make your own mix. I mix crushed cumin and coriander, add paprika, oregano. I season how to prepare it, I already told in one of the articles.


3. Rub salt and spices into the skin. Pepper to taste and leave to marinate for 30 minutes.

4. In the meantime, the meat is marinating, let's prepare other products. Wash and clean mushrooms. If these are mushrooms, like mine, then you just need to rinse them with water and remove the forest rubbish. If these are boletus or boletus, then they need to clean the leg from dark plaque. In oil, peel the hat from the skin.

If the mushrooms are large, then they should be cut into fairly large pieces. I have beautiful medium-sized mushrooms, and therefore I leave them whole.

5. Put water in a saucepan. As soon as the water boils, place the mushrooms there. Salt the water and cook the mushrooms for 5 minutes. You don't need to cook anymore. So they will retain their color, and the taste will not go into the water. When boiling, do not forget to remove the foam.

If we use other mushrooms, then they can first be poured with cold water and then put on fire. After the water boils, salt and boil them for 10 minutes, constantly removing the foam.

Ryzhik very tender mushrooms, and therefore they do not need to be subjected to a long boil. But it won't harm other mushrooms at all.

6. After the mushrooms are boiled, drain the water and put the mushrooms in a colander. Let the water drain.


7. Peel, wash and dry potatoes. Cut into very thin plates, 0.3 mm thick.


8. Prepare a mold and grease it from the inside with vegetable oil. I am using a glass mold. It is not very large and is just right for preparing a family dinner. If you are preparing this dish for the arrival of guests, then you can use a large baking sheet. But it is better to take it with high sides. The dish will be multi-layered.

9. Lay out the first layer of potatoes slightly overlapping. Pour a little vegetable oil into the palm of your hand and sprinkle it on top. With the oil that remains on your hands, grease the next chopped batch. Do not waste good.


10. Lay out the second layer from this second batch on top of the first. Spray it again with oil. We do this so that it does not stick together during baking.

11. And then lay out the third layer, which we also sprinkle with oil. Pour half a glass of boiled water. Steam will form from the water and the dish will be cooked as if steamed.

And also lightly sprinkle it with a mixture of prepared spices. Spices can be used the same that have already been used. And you can sprinkle with a mixture of Provence herbs for taste and aroma.


12. On top of this layer, beautifully lay out the legs.


13. Put the mushrooms in between. Since I have whole mushrooms, it turns out very beautifully. And even at this stage, the appetite is in earnest. And I’m not the only one, my husband walks around the kitchen in circles and asks more than once - when will we have dinner ?!


14. So that the dish is well baked and not fried, cover it with a sheet of foil. In this case, the baking temperature inside the mold will increase, and a steam effect will also be created. And the dish will cook faster, be tastier and healthier, and remain juicy and fragrant.


15. Preheat the oven to 180 degrees. We place a form with content in it. Close the oven door and forget about it for 45 minutes.

16. Shortly before the end of this time, three cheese on a medium grater.

17. After the allotted time, we take out the form, remove the foil and try the potatoes. She must be fully prepared. If you cut it thin enough, then in all three layers it should be ready. If you cut it thicker, and it is harsh, then cover the form with foil again and set it to “reach” for another 10-15 minutes to the desired state.

The legs should also be ready. If they are pierced with a knife, then pink juice should not stand out, and the cut should also not be pink.

As a rule, if the potatoes are ready, then the meat is also completely ready!

18. Ready meal sprinkle with cheese and put back in the oven, but do not cover it with foil. Bake until the cheese crust is golden brown, about 15 minutes.


19. We take out the finished dish from the oven, again cover it with foil, the one that was removed. And let's rest and exchange juices and taste. Then sprinkle with dill, which we do not cut, but tear directly with our hands into small pieces.


20. Serve on a serving plate, laying out a layer as it was baked - potatoes below, then chicken with mushrooms, and cheese to be on top. Try to lay everything out neatly so that appearance stimulated the appetite! Although the smell in the kitchen is already so strong that even if you put all this beauty on a plate, everything will be eaten in no time! Garnish with fresh chopped tomatoes and cucumber.
