Thanks to reader Katyusha for the idea of ​​a sweet snail with cherries and cottage cheese! It was she who came up with this version of spiral cottage cheese, and I embodied the idea, since the combination of cottage cheese and cherries is very tasty!

I decided to make a snail pie with cottage cheese and cherries from sand and yeast dough. Why? Because puff pastry can look undercooked because of the cherry juice. And from butter yeast we recently baked a pie with apples and poppy seeds.

The choice turned out to be successful: fluffy, crumbly dough went well with cherry and curd filling.


Ingredients:

For shortbread yeast dough:

  • 25-30 g fresh yeast;
  • 3 tablespoons of sugar;
  • Half a glass (100 ml) of milk;
  • 250 g butter;
  • 1 egg;
  • 4 cups flour.

For curd filling:

  • 200 g of cottage cheese;
  • 2-3 tablespoons of sugar;
  • 1 sachet of vanilla sugar.

For cherry filling:

  • 300 g pitted cherries;
  • 1-2 tablespoons of starch;
  • 2-3 tablespoons of sugar.

And powdered sugar for sprinkling.

How to bake a snail pie with cherries and cottage cheese:

Cooking shortbread-yeast dough, as for "Crimean" bagels.

Grind yeast with sugar, add warmed milk and mix.


Grind the butter and flour with your hands, add the egg.


Add yeast and milk to flour and mix soft dough.


Put the dough in the refrigerator for 1 hour.


We prepare the curd filling: mix the curd with simple and vanilla sugar.

And put the cherries in a colander to drain the juice.


Take the dough out of the refrigerator and divide into 2 parts. Sprinkle the table with flour, roll out one part into a rectangle 3-4 mm thick. We cut into two strips 10-12 cm wide, the edges can be cut off, and then molded and rolled out again. Having crushed the strips with starch, spread the cherries in the middle and sprinkle with a little sugar. Then we wrap the edge of the dough and carefully seal it up to make a tube with cherries.

In the same way, we make tubes with cottage cheese from the second half of the dough. I made a few more bagels from the leftover dough.


We cover the round shape with parchment, grease the bottom and sides with sunflower oil, and lay out the tubes, forming a snail. Starting from the center, we turn the tubes in a spiral, alternating: with cherries, with cottage cheese, again with cherries, again with cottage cheese.


We bake the cake for about 45-50 minutes - until the top becomes ruddy, and the wooden stick remains dry when testing the dough - first over medium heat (180-200C) to bake, and then on high (220C) to brown .


After letting the cake cool down a little, open the mold and move it to a dish, where we generously rub it with powdered sugar through a strainer.


Sweet snail is ready!

Pie snail puff pastry with cottage cheese and cherries

Ingredients:

  • Puff pastry - 500 gr;
  • Pitted cherries - 250 gr;
  • Granulated sugar- ½ stack;
  • Starch - 2 tbsp. l;
  • Egg - 1 pc.

Cooking process:

  1. Roll out the puff pastry into a thin layer and cut into strips, the width of which is 10 cm.
  2. Grind cottage cheese so as not to lump, add sugar and vanilla to taste.
  3. Free the cherries from the juice. To do this, put it in a colander and let drain.
  4. Fill half of the dough strips with the curd filling. To do this, put the cottage cheese in the center and form a tube, seal the edges well.
  5. Fill the other half of the dough with cherries. Sprinkle the berries with starch and sugar. Pinch the edges of the tube well so that the juice does not flow out during baking.
  6. Grease the form with oil, lay out the tubes in the shape of a snail, alternating curd and cherry.
  7. Beat the egg and brush the surface of the pie. Bake it in an oven preheated to 180 C for 40 minutes.

The filling for the pie can be prepared in a slightly different way. To do this, the cherry is combined with cottage cheese, after which the tubes are stuffed and laid in a spiral shape. How to cook cherry pie snail

  1. Take fresh cherries, wash well and dry. Remove the pit from each berry, place in a bowl and refrigerate.
  2. Now knead the dough: soften the butter at room temperature and chop with a knife. Place it in a deep bowl, add salt, soda and powdered sugar. Sift the flour and add it to the bowl as well. Grind all ingredients into crumbs. Then add kefir and knead the dough.
