Pancakes with fish very tasty cold appetizer, a worthy alternative to sandwiches with red fish. Of course, there are more worries with pancakes than with sandwiches, however, you will get a full-fledged appetizing snack that you can safely include in holiday menu, these are pancakes with red fish. This recipe uses vacuum-sealed salmon fillet, but it is allowed to use other fish (for example, pink salmon, salmon, etc.).

Ingredients for cooking:

- wheat flour - 1 cup;

- vegetable oil - 60-70 ml;

- chicken eggs - 2 pcs.;

- salt - 0.5 tsp (less possible);

- red fish (salmon fillet) - 150 g;

processed cheese- 1 PC.;

Recipe:

To prepare the dough for pancakes, first beat chicken eggs with salt and milk. You can add a pinch of ground pepper to this mixture.

Then add wheat flour, be sure to portions: add-beat. Then the dough will turn out homogeneous, without any lumps. If desired, you can beat the dough with a mixer.

Pour vegetable oil into the dough and mix well. This is necessary so that no more oil is added to the pan during frying.

Heat a dry frying pan, then pour in only 1 tablespoon of oil, then gently pour the dough into the pan with a ladle, straighten it with a ladle to make a more or less even circle that occupies the entire bottom. Oil is poured into the pan only before frying the first pancake, after which it is no longer necessary to pour it in.

Fry pancakes for a minute (even a little less) on both sides over low heat. To keep them soft until the next step, you can stack them on top of each other.

When the pancakes are cool, you can fill them with stuffing. First, you should grate the processed cheese on a fine grater, make a mesh of mayonnaise on top, put a piece of red fish fillet (salmon in this case).

Wrap the pancake with red fish in a tube, because if you wrap it in an envelope, you won’t be able to cut it beautifully. Do the same with all pancakes. Stack them on top of each other, hold in the refrigerator for about an hour, so that the filling freezes.

Then cut pancakes with red fish into 2-3 parts. By the way, you can cook pancakes with red fish “in bags”, for this, the filling should be put in the middle of the pancake, and the ends should be collected, forming a bag, which can be tied with a green onion feather.

Decorate the dish to your liking. It can be served with butter or hot sauce, and decorate with herbs (for example, parsley, arugula or rosemary).

Pancakes with fish and cream cheese

Decent appetizer holiday table, which will give odds to any salad, and even more so the usual cuts. All your guests will first of all reach for such rolls - it's checked! So provide plates with this treat at different ends of the table so that everyone has time to take pancakes with fish and delicious toppings.
The hardest thing about making appetizers is baking pancakes. They need to be made in advance according to your favorite recipe. Of course, they should be unsweetened and completely cooled. In the process of frying, oil the finished pancakes a little so that they do not stick together while they lie in a pile and wait for stuffing.

Ingredients: 1. pancakes (the quantity is up to you, I had about 20 pieces)
2. cream cheese, such as Creme Bonjour or Almette
3. a large piece of red salted fish without bones
4. 1 bunch of green onions and dill

How to cook pancakes with cream cheese and fish, step by step recipe with photos:

First you need to chop the dill and onion as finely as possible. Choose young and tender onion feathers and dill sprigs.

In a convenient cup, we will make the filling - add greens to the cheese and thoroughly knead everything with a spoon until smooth. Try - is there enough greens and salt. Please note that in stuffed pancakes this filling will not get too much, so the tastes should be saturated.

We take a stack of pancakes and directly on the topmost pancake we spread a little cheese dressing from the edge (somewhere a teaspoon without a slide).

On top of the spread we put a slice of an oblong-shaped fish. Its width is practically the future width of the appetizer, so adjust the dimensions so that your ready-made pancakes with cheese and fish are not prohibitively large. We talked about how to properly stuff pancakes in this article.

We begin to wrap the roll, grabbing the pancake tail from the edge where the filling lies. After making a couple of turns, we bend the side parts inward and twist the tight roll.

And now you have options:

  • leave the appetizer in this form for serving and put the rolls on the dish with a woodpile;
  • cut into 2 parts as shown in the main photo and serve as such;
  • cut not in a straight line, but along an oblique line, so that the feed looks more interesting.

Don't forget to decorate with greenery and get compliments for delicious pancakes with fish.

Pancakes with red fish

Pancakes stuffed with red fish are one of the most popular cold appetizers, which can not only decorate the home table, but deservedly is a constant in the menu of gourmet banquets and buffets. And, despite such popularity at dinner parties, the simplicity and speed of preparation is surprising.

How to cook pancakes with red fish - recipe

  • milk - 0.5 l;
  • vegetable oil - 40 g;
  • sugar - 1 tbsp. spoon;
  • eggs - 2 pcs.;
  • flour - 1.5 cups;
  • salt;
  • butter - 60 g;
  • red fish (slightly salted or smoked) - 400 g.

Sugar is an obligatory component of any pancakes, not only dessert ones, but even those that will be stuffed with meat or fish. Pour salt and sugar into the bowl in which you will make the dough, pour in the eggs, vegetable oil and mix well. Then add milk, but not all, 450 grams and repeat the mixing procedure again. And only after that, add flour. Flour is different for everyone, so its amount indicated in the list of ingredients can be both large and insufficient. The dough should be liquid, but not quite water, after cooking it needs to rest for at least half an hour. The liquid dough always becomes thicker after resting, this is due to the fact that the flour absorbs moisture and makes the dough thicker, but at the same time, such a well-rested dough becomes much more elastic. And the consistency can be changed by adding milk or plain drinking water. Then mix well and be sure to strain, thereby getting rid of unnecessary lumps that are formed in the batter even by the best cooks.

Now, even if you have a Teflon coating, grease the pan with literally a drop of vegetable oil and use a ladle to pour the dough into the center of the pan, yes, exactly in the center, so it will be easier for you to distribute it over the pan using its slopes. You can flip the pancakes, either with a spatula or with a fork and hands, but this requires skill and caution. They do not need to be fried to the state of cakes, as they will still need to be rolled up.

Lay out the pancakes one on one, pre-greasing with butter. Cut the fish into long slices, put on the edge of the already cooled pancake and just roll it into a tube, green lovers can put dill and parsley sprigs.

Pancake rolls with red fish and cheese

  • milk - 0.5;
  • vegetable oil - 40 g;
  • sugar - 1 tbsp. spoon;
  • eggs - 2 pcs.;
  • Philadelphia cheese - 200 g;
  • dill - ½ bunch;
  • flour - 1.5 cups;
  • salt;
  • butter - 60 g;
  • red fish (slightly salted or smoked) - 300 g.

Pre-cook delicious thin pancakes, which will serve as the basis for the rolls. To do this, the flour must be sifted and checked for excess items. In a bowl for kneading the dough, mix the liquid ingredients first, and then add the flour. And be sure to leave the dough to rest, this is fundamentally necessary.

When removing each pancake from the stove, do not forget to grease with a piece of butter.

There are not so many options for filling red fish for pancakes, but one of the most popular combines fish with cream cheese. The fish must be cut very thinly, literally until transparent, and just finely chop the dill. Now, when the pancakes have cooled down, each, spread cheese over the entire surface of one of the sides, sprinkle with dill, and put the fish on top, then twist tightly into rolls. To serve, cut them diagonally.
